Rock’in Salsa

I remember fondly days spent in a room with several other ladies packed in like sardines because our employer was running out of office space.  There were some terrific conversations in that room, shared ideas, friendships that were culminated over….salsa?  Yes, salsa I say!  Each of us had our own recipe and would take turns bring it in and munching all day!  Here’s was my contribution….

Yummy! 

2 15 oz cans Del Monte plain Petite dices tomatoes

1 med sweet onion

6-7 jalapeno slices (more or less to your liking)

1-2 clove garlic (or 2 tsps of the jar stuff)

juice of 1 lime

Fresh Cilantro

Salt

In a food processor or blender, blend the two cans of tomatoes until well chopped ( in my version there are not many bits of tomato).  Pour into a bowl.  Chop onions, jalapeno, garlic and cilantro in food processor ( or chopped with a knife if you like the bigger chunks).  Add to tomatoes.  Squeeze in lime juice and add mucho salt!   Enjoy with tortilla chips, on tacos, as a dip for your quesidillas…the options are endless!

    Ah, those were the days! Great picture! I have always loved your salsa! I will have to make it soon…..or you can bring any left overs in on Tuesday!! 🙂
